Musakhan (Sumac Spiced Chicken) recipe by Chef Ishijyot Surri, Executive Chef – SJI Hospitality and Foods Pvt. Ltd
Ingredients:
- 1 chicken, cut into pieces
- 4 large onions, thinly sliced
- 4 tablespoons olive oil
- 3 tablespoons sumac
- 2 teaspoons ground cumin
- a pinch of saffron
- Salt and pepper to taste
Method:
- Preheat the oven to 375°F (190°C).
- Caramelize onions in 2 tbsp olive oil.
- Season chicken with saffron, sumac, cumin, salt, and pepper.
- Brown chicken in remaining olive oil.
- Place chicken in a baking dish, top with caramelized onions.
- Bake covered for 30-40 minutes.
Lamb Kofta Kebab recipe by Chef Ishijyot Surri, Executive Chef – SJI Hospitality and Foods Pvt. Ltd
Ingredients:
- 500g ground lamb
- 1 small onion, finely grated
- 2 cloves garlic, minced
- Juice from 1/2 lemon
- 1/4 cup chopped fresh parsley
- 2 teaspoons ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon paprika
- 1/2 teaspoon ground cinnamon
- Salt and pepper to taste
- Olive oil, for brushing
Method:
- Mix all ingredients in a bowl.
- Shape into kebabs.
- Grill for 4-5 minutes each side.
- Serve hot with preferred sides.

Ingredients:
- Whole chicken
- Whole Spices
- Basmati Rice
- Turmeric powder
- Salt
- Oil
- Chicken broth
- Peas
- Raisins
- All spice
- Bay leaf
- Green chili
- Saffron
- Brown onion
- Almonds
- Ground Spices: Black pepper powder, Curry powder, All spice powder, Cinnamon powder, Nutmeg, Biryani spice mixer
Method:
- Boil chicken with whole spices until cooked.
- Bake cooked chicken in the oven.
- Cook rice with turmeric, salt, oil, and broth.
- Sauté raisins, almonds, and peas.
- Prepare spice mixture and fry with green chili, bay leaf, and onion.
- Layer rice, chicken, and sautéed mixture.
- Garnish with saffron water.
- Let it sit for 10 minutes.
- Serve with salad and yogurt.
