Gather any supplies you might need. Stimpacks, Doctor's Bags, Med-X, and as much food as you can carry. If you haven't even passed Quarry Junction yet, listen to the advice the workers give you: go around and start stocking up on supplies once you reach New Vegas. Try to stock food and drink, such as Purified Water, that won't give you any rads.
Equip your best armor and weapon. Ideally, you want heavy armor, like power armor. Make sure it's fully repaired. Try to include a helmet, if you have one.
Get some good weapons. The weapon you choose should depend on where your character's combat strengths lie: Melee, Unarmed or Ranged. . Some people find it easier to use Ranged weapons when fighting Deathclaws, as Deathclaws do a lot of damage but can only attack within close distances (and Ranged weapons can hit targets from far away). Good choices for ranged weapons would be the Alien Blaster, the Gobi Campaign sniper rifle, Gauss rifles, and heavy incinerators. If you decide to use a Ranged weapon, make sure to stock up on ammo before heading to the fight.
Get a full party (two companions). Unmodded Fallout: New Vegas allows you to have up to one human and one non-human companion. Good choices are Boone or Veronica (for human), and Rex or Lily (for non-human).
Travel to Quarry Junction. Save before you enter.
Take down the two young Deathclaws at the entrance. Pilfer the dead Powder Ganger if you feel like it.
Save again, and continue on. Stay up on the ridge. As you get close, crouch until you are hidden, then start firing.
Shoot until you see the mother Deathclaw. Avert all your fire to the den mother. This is the most powerful Deathclaw, and you need to kill it as soon as you see it.
Once it's dead, forget the others. Get out of there! If you have companions, they will hopefully distract any remaining Deathclaws long enough for you to escape.
Save once you reach a safe position. The Deathclaws will no longer respawn once killed.
